Not the prettiest thing I've made but it's only because I underestimated the berry ooze! I made the "grottor" (or cave in Swedish) for the jam too small. I suggest making a bigger well! It tends to crumble down so it's best to bake them in little cups or in my case, I cut wax paper into squares and put them in a cupcake baking tray. It's a very unique taste and I must say I've never had a cookie taste like this before because of the anise seeds. Please give it a try!
1/4 cup of natural cane sugar
1/4 cup of Stevia
2 cups of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of crushed anise seeds
8 oz. of chilled butter, cubed
1/2 teaspoon of vanilla extract
Choice of jam (I used Den Gamle Fabrik Solbær or blackcurrant)
Heat the oven at 400 degrees Fahrenheit. Mix flour, sugar, anise seeds and baking powder in a large bowl. Combine chilled and cubed butter with the dry mixture. Add vanilla extract. Make sure everything is well combined with the heat of your hands until you can form it into a solid ball. Line a cupcake tray with paper. Roll the dough into approximately 1.5" balls. Create a mini "grottor" or cave in the middle of the dough ball and place a small amount of jam. Bake for around 15 minutes or until golden brown. Smaklig måltid!
